Ingredients
- 1.5 cups beans
- 1 cup artichoke heart quarters
- 2 tablespoons tahini
- 2 tablespoons lemon juice
- 1 clove garlic
- 2 tablespoons olive oil
- 0.5 teaspoon sea salt
- 1 teaspoon cumin
- 0.5 teaspoon paprika
- 2 tablespoons parsley
- 2 tablespoons water
Instructions
- 1Rinse and drain the white beans and artichoke hearts.
- 2In a food processor, combine the white beans, artichoke hearts, tahini, lemon juice, and garlic.
- 3Process until the mixture starts to become smooth.
- 4With the processor running, gradually add the olive oil and water until the desired consistency is achieved.
- 5Season with sea salt, ground cumin, and paprika.
- 6Process again until all the ingredients are fully incorporated and the hummus is creamy and smooth.
- 7Taste and adjust the seasoning if necessary.
- 8Transfer the hummus to a serving dish.
- 9Garnish with paprika and fresh parsley before serving.
- 10Serve with a selection of fresh vegetables for dipping.
