Ingredients

  • 4 fillets cod fillets
  • 2 medium bell pepper
  • 1 medium white onion
  • 2 tablespoons light olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon coarsely ground pepper
  • 4 wedges lime wedges

Instructions

  1. 1Preheat oven to 400°F (200°C).
  2. 2Cut bell peppers and white onion into 1-inch pieces.
  3. 3In a large bowl, toss the bell peppers and white onion with light olive oil, garlic powder, dried thyme, sea salt, and coarsely ground pepper.
  4. 4Spread the vegetables in a single layer on a baking sheet.
  5. 5Place the cod fillets on top of the vegetables.
  6. 6Bake for 20-25 minutes, or until the cod is cooked through and flakes easily with a fork and the vegetables are tender.
