Ingredients

  • 2 tablespoons olive oil
  • 2 cups broccoli florets
  • 8 eggs
  • 1 cup milk
  • 1 cup sharp cheddar cheese, reduced fat
  • 0.5 onion
  • 2 cloves garlic
  • 2 tablespoons basil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions

  1. 1Preheat oven to 375 degrees F (190 degrees C).
  2. 2In a non-stick, oven-safe skillet, heat olive oil over medium heat. Add the onions and garlic, cooking until translucent, about 3 minutes.
  3. 3Add the broccoli florets to the skillet and sauté for an additional 5 minutes, or until they are bright green and slightly tender.
  4. 4In a large bowl, whisk together eggs, skim milk, salt, and black pepper.
  5. 5Stir in the shredded cheddar cheese and fresh basil into the egg mixture.
  6. 6Pour the egg mixture over the sautéed broccoli in the skillet. Cook over medium heat until the edges start to set, about 5 minutes.
  7. 7Transfer the skillet to the preheated oven. Bake until the frittata is set and lightly golden on top, about 20 minutes.
  8. 8Remove from oven, let it cool for a few minutes. Slice into wedges and serve.
  9. 9Garnish with additional fresh basil before serving.
