  • 4 whole avocado
  • 8 ounces mozzarella cheese
  • 1 cup cherry tomatoes
  • 1 cup basil
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon lemon juice

Instructions

  1. 1Slice avocados in half and remove the pits. Carefully scoop out some of the flesh to create more room for the filling, leaving a border.
  2. 2Dice the scooped avocado flesh and set aside.
  3. 3In a bowl, combine diced avocado, halved cherry tomatoes, and torn fresh mozzarella.
  4. 4Tear fresh basil leaves and add them to the bowl.
  5. 5Dress the mixture with extra virgin olive oil, balsamic vinegar, and lemon juice. Season with salt and black pepper to taste.
