Ingredients
- 1 pound fish
- 0.5 cup lime juice
- 2 medium tomatoes
- 1 medium onion
- 0.25 cup cilantro
- 2 tablespoons olive oil
- 1 large avocado
- 1 medium cucumber
- 1 medium bell pepper
- 1 teaspoon sea salt
- 0.5 teaspoon black pepper
Instructions
- 1Dice the white fish into 1/2 inch pieces and place in a glass or ceramic bowl.
- 2Pour lime juice over the fish, ensuring all pieces are covered. Refrigerate for 3-4 hours until the fish is opaque and cured.
- 3Dice the tomatoes, onion, and cucumber. Seed and dice the bell pepper. Finely chop the cilantro.
- 4Once the fish is cured, drain the excess lime juice.
- 5Add the vegetables and cilantro to the fish. Drizzle with olive oil and season with salt and pepper.
- 6Gently mix the ceviche, ensuring not to break the fish pieces.
- 7Cover and refrigerate for an additional 10 minutes to allow the flavors to meld.
- 8Before serving, dice the avocado and gently fold into the ceviche.
- 9Serve the ceviche chilled, garnished with extra cilantro leaves if desired.
- 10Enjoy with a side of gluten-free tortilla chips or over a bed of mixed greens for a complete meal.
- 11For an extra kick, add a few dashes of hot sauce or sliced jalapeños to taste.
