Ingredients

  • 8 ounces grain pasta
  • 2 cups cherry tomatoes
  • 2 cups spinach
  • 2 cloves garlic
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese
  • 0.5 cup parmigiano reggiano
  • 2 tablespoons olive oil
  • 0.25 cup basil
  • 1 teaspoon oregano
  • 0.5 teaspoon red pepper flakes
  • 1 large eggs

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Cook whole grain pasta according to package instructions until al dente, drain and set aside.
  3. 3In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant.
  4. 4Add cherry tomatoes and cook until they start to soften. Stir in spinach until wilted.
  5. 5In a mixing bowl, combine ricotta, half of the mozzarella, parmesan, beaten egg, basil, oregano, and red pepper flakes.
  6. 6Fold the cooked pasta and vegetables into the cheese mixture until well combined.
  7. 7Transfer the pasta mixture into a baking dish. Sprinkle the remaining mozzarella on top.
  8. 8Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  9. 9Let the pasta bake cool slightly before serving.
  10. 10Garnish with additional fresh basil before serving.
