Ingredients
- 4 tablespoons chia seeds
- 1 cup almond milk
- 0.5 cup blueberries
- 0.5 cup strawberries
- 1 whole kiwis
- 2 tablespoons honey
- 4 leaves mint
- 1 teaspoon lemon zest
Instructions
- 1In a mixing bowl, combine the chia seeds and almond milk. Stir thoroughly until well mixed.
- 2Cover the bowl with a lid or plastic wrap and refrigerate for at least 4 hours, or overnight, allowing the chia seeds to swell and absorb the liquid.
- 3While the pudding sets, prepare the fruit toppings. Wash the blueberries and strawberries, and slice the strawberries.
- 4Peel and dice the kiwi into bite-sized pieces.
- 5Once the pudding has set and is of a thick consistency, give it a good stir to break up any clumps.
- 6Spoon the pudding into serving bowls or glasses.
- 7Top each serving with an equal amount of blueberries, strawberries, and kiwi.
- 8Drizzle honey over the fruit-topped pudding.
- 9Garnish with mint leaves and sprinkle with lemon zest.
