Ingredients

  • 1.5 lbs cooked chicken breast
  • 1 lb bok choy
  • 0.5 cup low sodium chicken broth
  • 0.5 medium white onion
  • 2 tablespoons light olive oil
  • 1 teaspoon garlic powder
  • 0.5 teaspoon dried rubbed sage
  • 0.25 teaspoon coarse salt
  • 0.25 teaspoon coarsely ground pepper

Instructions

  1. 1Cut the cooked chicken breast into bite-sized pieces.
  2. 2Wash and chop the bok choy, separating the stems from the leaves. Chop the white onion.
  3. 3Heat light olive oil in a large skillet or wok over medium-high heat.
  4. 4Add the chopped white onion and bok choy stems to the skillet and stir-fry for 3 minutes.
  5. 5Add the chicken pieces and bok choy leaves to the skillet. Stir-fry for another 5 minutes, or until the chicken is heated through and the bok choy leaves are wilted.
  6. 6Pour in the low sodium chicken broth and add the garlic powder, dried rubbed sage, coarse salt, and coarsely ground pepper. Stir well to combine.
  7. 7Continue to stir-fry for 2 more minutes, allowing the sauce to thicken slightly. Serve immediately.
