Ingredients

  • 1.5 lbs chicken breast
  • 3 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 tsp lemon juice
  • 1 tbsp garlic paste
  • 1 tsp garlic paste
  • 1 tsp oregano
  • 1 tsp salt
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp red wine vinegar
  • 0.5 tsp dried thyme
  • 1 tsp honey
  • 1.5 cups non-fat greek yogurt
  • 1 cup cucumber
  • 2 tbsp fresh mint
  • 4 pieces wheat flatbread
  • 0.5 small red onion
  • 2 tbsp parsley

Instructions

  1. 1Combine chicken cubes with 3 tbsp olive oil, 2 tbsp lemon juice, 1 tbsp garlic paste, oregano, 1 tsp salt, black pepper, red wine vinegar, thyme, and honey. Marinate for at least 30 minutes, then thread chicken onto skewers.
  2. 2For the tzatziki, mix Greek yogurt, grated cucumber, mint, 1 tsp garlic paste, 1 tsp lemon juice, and 0.5 tsp salt. Chill until serving.
  3. 3Grill or pan-fry chicken skewers over medium-high heat for 8-12 minutes, turning occasionally, until cooked through and lightly charred.
  4. 4Warm pita bread on the grill or in a pan. Serve chicken souvlaki skewers with warm pita, a generous dollop of tzatziki, sliced red onion, and fresh parsley.
