- 1 medium cucumber
- 2 medium tomatoes
- 0.5 bell pepper
- 0.25 cup onion
- 1 clove garlic
- 0.25 cup parsley
- 1 tablespoon mint
- 2 tablespoons olive oil
- 1 tablespoon wine vinegar

- to taste peppers
- 0.5 teaspoon oregano
Instructions
- 1In a large bowl, combine the diced cucumber, tomato, bell pepper, sliced red onion, minced garlic, chopped parsley, and chopped mint.
- 2In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, sea salt, black pepper, and dried oregano.
- 3Pour the dressing over the cucumber and tomato mixture and toss gently to combine.
- 4Allow the salad to sit for at least 15 minutes to allow the flavors to meld. Taste and adjust seasonings as needed.
