- 1.5 cups wheat pastry flour
- 0.25 cup water
- 3 tablespoons olive oil
- 1 cup feta cheese
- 0.5 cup kalamata olives
- 1 cup spinach
- 1 large eggs
- 1 teaspoon lemon zest
- 2 tablespoons dill
- 0.5 teaspoon black pepper
Instructions
- 1Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- 2In a large bowl, mix whole wheat pastry flour with a pinch of salt. Gradically add cold water and 2 tablespoons of olive oil until the dough forms.
- 3On a floured surface, roll the dough into a rectangle about 1/8 inch thick.
- 4In a separate bowl, combine crumbled feta cheese, chopped kalamata olives, chopped fresh spinach, lemon zest, chopped fresh dill, and black pepper.
- 5Spread the feta and olive mixture evenly over the rolled-out dough, leaving a small margin at the edges.
- 6Starting at one long side, roll the dough tightly into a log. Cut into 1-inch thick slices.
- 7Place slices on the prepared baking sheet, brush with beaten egg, and drizzle with remaining olive oil.
- 8Bake for 25 minutes or until the swirls are golden and puffed up.
- 9Let cool for 5 minutes before serving.
