Ingredients

  • 1 large white onion
  • 2 tablespoons light olive oil
  • 8 ounces fish
  • 1 tablespoon unsalted butter
  • 2 teaspoons garlic powder
  • 0.25 teaspoon salt
  • 0.125 teaspoon white pepper
  • 2 tablespoons white wine
  • 1 tablespoon parsley flakes
  • 0.5 ounce shredded mozzarella

Instructions

  1. 1Cut the white onion into thin strips using a mandoline or vegetable peeler to mimic noodles.
  2. 2Lightly sauté the onion strips in 1 tablespoon of light olive oil until they are tender-crisp, about 5-7 minutes. Set aside and keep warm.
  3. 3Ensure the fish is deveined and patted dry.
  4. 4In a large skillet, heat 1 tablespoon of light olive oil and the unsalted butter over medium-high heat.
  5. 5Add the garlic powder to the hot oil and butter mixture. Sauté for about 30 seconds until fragrant, being careful not to burn it.
  6. 6Add the fish to the skillet in a single layer. Season with salt and white pepper.
  7. 7Cook for 2-3 minutes per side, until pink and opaque. Be careful not to overcook.
  8. 8Deglaze the pan with dry white wine after the fish is cooked. Let the wine reduce slightly, scraping up any browned bits from the bottom of the pan.
  9. 9Add the sauteed onion strips to the skillet with the fish. Toss gently to combine.
  10. 10Sprinkle with parsley flakes. Serve immediately. Top with shredded mozzarella.
