Garlic Fish with Zoodles

- 1 lb fish
- 2 medium zucchini
- 2 tbsp light olive oil
- 1 tbsp unsalted butter
- 0.5 medium white onion
- 0.25 medium green bell pepper
- 0.5 tsp salt
- 0.25 tsp white pepper
- 1 tsp garlic powder
- 0.5 tsp dried rubbed sage
- 0.25 cup white wine
- 1 tbsp parsley flakes
- 2 lime wedges
Instructions
- 1Prepare zoodles from zucchini using a spiralizer. Lightly salt them and place in a colander for 15 minutes to draw out moisture. Pat dry with paper towels.
- 2Heat light olive oil and unsalted butter in a large skillet over medium heat. Add finely diced white onion and green bell pepper; sauté until softened and translucent, about 3-5 minutes.
- 3Add fish pieces (cut into shrimp-sized pieces) to the skillet. Season with salt, white pepper, garlic powder, and dried rubbed sage. Sauté until fish is opaque and cooked through, 5-7 minutes.
- 4Pour in white wine to deglaze the pan, scraping up any browned bits from the bottom. Let the wine reduce slightly for about 2 minutes.
- 5Add the prepared zoodles to the skillet. Toss gently to combine with the fish and sauce. Cook for just 2 minutes, until heated through but still slightly firm (al dente).
- 6Divide the Garlic Fish with Zoodles among plates. Garnish with parsley flakes and serve immediately with lime wedges.
