Ingredients

  • 1 large sweet potato
  • 4 oz smoked salmon
  • 1 large avocado
  • 1 tbsp extra virgin olive oil
  • 0.25 tsp sea salt
  • 0.125 tsp cracked pepper
  • 1 tbsp fresh chives
  • 1 tbsp lemon juice
  • 1 tsp dried dill
  • 0.5 tsp red chilli
  • 2 wedges lime wedges
  • 1 tsp flax seeds
  • 5 cherry tomatoes cherry tomatoes
  • 0.5 cup baby spinach leaves
  • 1 tsp apple cider vinegar
  • 1 tbsp pomegranate seeds

Instructions

  1. 1Slice the sweet potato into 1/4-inch thick 'toast' rounds. Brush them with olive oil, then sprinkle with sea salt and cracked pepper. Bake at 400°F (200°C) for 15-20 minutes, flipping halfway through, until they are tender and slightly caramelized.
  2. 2While the sweet potatoes bake, mash the avocado with lemon juice, dried dill, a pinch of sea salt, and cracked pepper. Stir in the apple cider vinegar if desired.
  3. 3Once the sweet potato slices are ready, layer each with a few baby spinach leaves, a generous dollop of mashed avocado, and slices of smoked salmon.
  4. 4Garnish with chopped fresh chives, finely chopped red chili, flax seeds, halved cherry tomatoes, and pomegranate seeds. Serve immediately with lime wedges.
