- 2 medium zucchini

- 2 tablespoons lemon juice

- 2 cloves garlic
- 1 small red onion
- 0.5 teaspoon sea salt
- 0.25 teaspoon black pepper
- 1 cup cherry tomatoes
- 0.5 cup kalamata olives
- 1 medium cucumber
Instructions
- 1Thinly slice the pork loin, zucchini, and cucumber. Mince the garlic and chop the red onion.
- 2In a large skillet, heat the extra virgin olive oil over medium-high heat.
- 3Add the pork loin slices to the skillet, season with half the salt and pepper, and stir-fry until they are browned and cooked through, about 6-8 minutes. Remove pork from the skillet and set aside.
- 4In the same skillet, add the red onion and garlic, sautéing until they are soft and fragrant, about 2 minutes.
- 5Add the zucchini to the skillet, seasoning with the remaining salt and pepper, and stir-fry until tender but still crisp, about 4-5 minutes.
- 6Return the pork to the skillet with the zucchini, and add the cherry tomatoes and kalamata olives.
- 7In a small bowl, whisk together the lemon juice and chopped oregano. Pour this sauce over the stir-fry in the skillet.
- 8Toss everything together and cook for an additional 2-3 minutes, allowing the flavors to meld.
