- 3 cloves garlic

- 1 teaspoon rosemary
- 1 teaspoon thyme
- 1 teaspoon sea salt
- 0.5 teaspoon black pepper
- 1 large red onion
- 2 medium bell pepper
Instructions
- 1Trim any excess fat from the pork shoulder and cut into 1-inch cubes.
- 2In a large mixing bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, rosemary, thyme, sea salt, and black pepper.
- 3Add pork cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
- 4If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
- 5Preheat the grill to medium-high heat.
- 6Cut the red onion and bell peppers into chunks that are about the size of the pork cubes.
- 7Thread the marinated pork, onion, and bell pepper pieces alternately onto the skewers.
- 8Grill the skewers for 12-15 minutes, turning occasionally, until the pork is cooked through and vegetables are slightly charred.
- 9Remove from grill and let rest for a few minutes.
