Ingredients
- 400 g steaks
- 2 tbsp olive oil
- 1 cup cucumber
- 1 cup cherry tomatoes
- 0.25 cup kalamata olives
- 0.5 cup red onion
- 0.5 cup feta cheese
- 2 tbsp lemon juice
- 1 tbsp oregano
- 1 clove garlic
- 1 tsp sea salt
- 1 tsp black pepper
Instructions
- 1Preheat grill to high. Lightly brush steak with 1 tablespoon olive oil and season with salt and pepper.
- 2Grill steak to desired doneness, about 4-5 minutes per side for medium-rare. Let it rest for 5 minutes.
- 3While steak is resting, prepare the salad. In a large bowl, combine sliced cucumbers, cherry tomatoes, Kalamata olives, and thinly sliced red onion.
- 4In a small bowl, whisk together lemon juice, the remaining olive oil, minced garlic, chopped oregano, salt, and pepper to create the dressing.
- 5Slice the rested steak thinly against the grain.
- 6Toss the salad with the dressing, then gently fold in the steak slices.
- 7Serve the salad topped with crumbled feta cheese.
- 8Garnish with additional fresh oregano leaves if desired.
