Ingredients

  • 1.5 lbs chicken breast
  • 1 cup non-fat greek yogurt
  • 2 tbsp lemon juice
  • 2 tbsp extra virgin olive oil
  • 1 tbsp garlic paste
  • 1 tsp fresh ginger
  • 0.5 red onion
  • 2 tbsp mint
  • 1 tsp oregano
  • 1 tsp ground coriander seeds
  • 1 tsp salt
  • 0.5 tsp white pepper
  • 1 green bell pepper
  • 1 red bell peppers
  • 1 yellow bell pepper
  • 1 cup grape tomatoes
  • 0.5 tsp thyme
  • 0.25 tsp nutmeg

Instructions

  1. 1In a bowl, combine yogurt, lemon juice, olive oil, garlic paste, ginger, mint, oregano, coriander, salt, white pepper, and thyme. Add chicken cubes, ensuring they are well coated. Marinate for at least 2 hours, or overnight, in the refrigerator.
  2. 2Thread the marinated chicken, bell pepper pieces, red onion wedges, and grape tomatoes alternately onto skewers.
  3. 3Preheat your grill to medium-high heat. Grill the kebabs for 10-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender-crisp with nice char marks.
