Grilled Chicken Kebabs with Yogurt Marinade

- 1.5 lbs chicken breast
- 1 cup non-fat greek yogurt
- 2 tbsp lemon juice
- 2 tbsp extra virgin olive oil
- 1 tbsp garlic paste
- 1 tsp fresh ginger
- 0.5 red onion
- 2 tbsp mint
- 1 tsp oregano
- 1 tsp ground coriander seeds
- 1 tsp salt
- 0.5 tsp white pepper
- 1 green bell pepper
- 1 red bell peppers
- 1 yellow bell pepper
- 1 cup grape tomatoes
- 0.5 tsp thyme
- 0.25 tsp nutmeg
Instructions
- 1In a bowl, combine yogurt, lemon juice, olive oil, garlic paste, ginger, mint, oregano, coriander, salt, white pepper, and thyme. Add chicken cubes, ensuring they are well coated. Marinate for at least 2 hours, or overnight, in the refrigerator.
- 2Thread the marinated chicken, bell pepper pieces, red onion wedges, and grape tomatoes alternately onto skewers.
- 3Preheat your grill to medium-high heat. Grill the kebabs for 10-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender-crisp with nice char marks.
- 4Serve hot.
