Ingredients

  • 1.5 pounds swordfish
  • 2 pieces bell pepper
  • 1 piece onion
  • 4 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic
  • 1 teaspoon oregano
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley
  • 1 piece cucumber
  • 2 pieces tomatoes
  • 100 grams feta cheese

Instructions

  1. 1Cut swordfish into 1-inch cubes and place in a large bowl.
  2. 2Chop bell peppers and onions into chunks suitable for skewers.
  3. 3Mix olive oil, lemon juice, minced garlic, oregano, and black pepper in a small bowl.
  4. 4Pour marinade over swordfish cubes, cover, and refrigerate for at least 2 hours.
  5. 5Preheat grill to medium-high heat.
  6. 6Thread swordfish, bell peppers, and onions alternately onto skewers.
  7. 7Grill skewers, turning occasionally, until fish is opaque and vegetables are tender, about 10-15 minutes.
  8. 8Chop cucumber and tomatoes, and crumble feta cheese for salad.
  9. 9Combine cucumber, tomatoes, and feta cheese in a bowl. Drizzle with olive oil and sprinkle with parsley.
  10. 10Serve grilled skewers with the fresh salad on the side.
  11. 11Optionally, garnish with lemon wedges and additional parsley before serving.
