Ingredients

  • 2 count Tuna Steaks
  • 5 tbsp extra virgin olive oil
  • 3 tbsp lemon juice
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 large avocado
  • 1 large cucumber
  • 4 cups lettuce
  • 0.25 cup fresh basil
  • 2 tbsp mint
  • 1 tbsp fresh chives
  • 0.25 cup pomegranate seeds
  • 1 tsp oregano
  • 1 tsp dried thyme
  • 0.5 tsp paprika
  • 2 count lime wedges

Instructions

  1. 1Pat tuna steaks dry. In a shallow dish, combine 3 tbsp olive oil, 1 tbsp lemon juice, oregano, thyme, paprika, 1/2 tsp salt, and 1/4 tsp black pepper. Marinate tuna for 15-20 minutes.
  2. 2Preheat grill to medium-high. Grill tuna steaks for 2-4 minutes per side, or until desired doneness is reached.
  3. 3While tuna cooks, prepare the salad. Dice avocado and cucumber. In a large bowl, gently combine greens, diced avocado, cucumber, fresh basil, mint, chives, and pomegranate seeds.
  4. 4Whisk together the remaining 2 tbsp olive oil, 2 tbsp lemon juice, 1/2 tsp salt, and 1/4 tsp black pepper for the salad dressing.
  5. 5Serve grilled tuna alongside the avocado-cucumber salad, drizzled with dressing and garnished with lime wedges.
