Ingredients

  • 1 kg turkey breast
  • 4 pieces guajillo chiles
  • 1 cup orange juice
  • 3 cloves garlic
  • 1 medium onion
  • 1 tsp cumin
  • 1 tsp coriander
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tbsp lime juice
  • 1 tsp salt
  • 0.5 tsp peppers

Instructions

  1. 1Preheat the oven to 350°F (175°C).
  2. 2Rehydrate guajillo chiles in hot water for 20 minutes, then remove stems and seeds.
  3. 3Blend rehydrated chiles, orange juice, garlic, onion, cumin, coriander, and lime juice until smooth to make the sauce.
  4. 4In a skillet, heat olive oil over medium heat. Add the sauce and honey, simmer for 10 minutes until thickened.
  5. 5Season the turkey breast with salt and black pepper.
  6. 6Place the turkey in a roasting pan and brush generously with the sauce.
  7. 7Roast in the preheated oven, basting every 20 minutes with the sauce, for about 1 hour, or until the internal temperature reaches 165°F (74°C).
  8. 8Let the turkey breast rest for 10 minutes before slicing.
  9. 9Serve sliced turkey breast with additional sauce on the side.
  10. 10Garnish with fresh herbs if desired.
