Ingredients
- 200 g halloumi cheese
- 2 medium zucchini
- 1 large red bell peppers
- 1 large yellow bell pepper
- 1 large red onion
- 200 g cherry tomatoes
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 2 cloves garlic
- 1 tsp oregano
- 1 tsp thyme
- 0.5 tsp black pepper
Instructions
- 1Cut the halloumi cheese into 16 equal pieces. Slice the zucchini, bell peppers, and red onion into pieces that will easily fit on skewers.
- 2In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, and black pepper.
- 3Add the cut vegetables and halloumi pieces to the bowl and gently toss to coat with the marinade.
- 4Let the cheese and vegetables marinate for at least 15 minutes to absorb the flavors.
- 5While the ingredients are marinating, soak wooden skewers in water for 15 minutes to prevent burning.
- 6Preheat the grill to a medium-high heat.
- 7Thread the marinated halloumi and vegetables alternately onto the skewers.
- 8Grill the skewers for 2-3 minutes on each side or until the vegetables are tender and the cheese has grill marks.
- 9Remove the skewers from the grill and let them rest for a few minutes.
- 10Serve the skewers hot, with a drizzle of olive oil and a sprinkle of fresh herbs if desired.
