Hearty Mediterranean Turkey and Mushroom Rice Pilaf

Ingredients
- 1 lb turkey
- 1.5 cup basmati rice
- 3 cup stock
- 2 tbsp extra virgin olive oil
- 8 oz mushroom
- 1 unit yellow bell pepper
- 2 unit celery ribs
- 1 tbsp fresh ginger
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp thyme
- 0.5 tsp salt
- 0.25 tsp black pepper
- 2 tbsp parsley flakes
- 1 tbsp lemon juice
- 0.25 cup pine nuts
Instructions
- 1Heat olive oil in a large pot or Dutch oven. Brown ground turkey, then drain. Add bell pepper, celery, fresh ginger, and mushrooms; sauté until softened.
- 2Stir in basmati rice, cumin, oregano, thyme, salt, and black pepper. Cook for 1-2 minutes, stirring, until rice is lightly toasted.
- 3Pour in stock. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until liquid is absorbed and rice is tender.
- 4Remove from heat, let stand covered for 5 minutes. Fluff with a fork, stir in lemon juice, parsley flakes, and pine nuts. Serve warm.
