Ingredients

  • 1.5 kg lamb leg
  • 3 tablespoons rosemary
  • 6 pieces garlic
  • 2 tablespoons olive oil
  • 2 pieces lemon
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 2 tablespoons thyme
  • 2 tablespoons oregano
  • 2 pieces red onion
  • 3 pieces carrot
  • 2 pieces zucchini

Instructions

  1. 1Preheat your oven to 180°C (350°F).
  2. 2Rub the lamb leg with sea salt, black pepper, and olive oil.
  3. 3Make small incisions in the lamb and insert garlic cloves and rosemary sprigs evenly throughout.
  4. 4Squeeze the juice of one lemon over the lamb.
  5. 5Place the lamb in a roasting pan, and surround it with roughly chopped onions, carrots, and zucchini.
  6. 6Sprinkle the vegetables with olive oil, salt, pepper, thyme, and oregano.
  7. 7Roast in the preheated oven for about 1.5 hours, or until the lamb is cooked to your preference.
  8. 8Halfway through, add the juice of the second lemon over the lamb and vegetables.
  9. 9Once cooked, remove the lamb from the oven, cover with foil, and let it rest for 15 minutes.
  10. 10Carve the lamb into slices, serve with the roasted vegetables, and garnish with fresh rosemary and oregano.
  11. 11Optionally, drizzle with more extra virgin olive oil before serving.
