Ingredients

  • 5 oz cod
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 tsp lemon zest
  • 2 tbsp olive oil
  • 1 bunch asparagus spears
  • 1 cup beans
  • 0.25 tsp sea salt
  • 0.125 tsp peppers

Instructions

  1. 1Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. 2In a small bowl, whisk together olive oil, lemon zest, thyme, rosemary, salt, and pepper.
  3. 3Arrange asparagus and green beans in a single layer on the prepared baking sheet.
  4. 4Place the cod fillet on top of the vegetables.
  5. 5Drizzle the lemon herb mixture evenly over the cod and vegetables.
  6. 6Bake for 12-15 minutes, or until the cod is cooked through and flakes easily with a fork and the asparagus is tender-crisp.
