- 6 oz chicken breast
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons olive oil
- 2 cloves garlic
- 1 tablespoon rosemary
- 1 teaspoon thyme leaves
- 1 teaspoon oregano
- 1 medium zucchini
- 1 medium bell pepper
- 0.5 medium onion
- 1 cup cherry tomatoes
- 0.5 teaspoon sea salt
- 0.25 teaspoon peppers
- 0.5 teaspoon oregano
- 0.25 teaspoon paprika
Instructions
- 1In a bowl, combine lemon juice, lemon zest, olive oil, minced garlic, chopped rosemary, thyme leaves, fresh oregano, sea salt, black pepper, dried oregano, and smoked paprika (optional).
- 2Marinate the chicken breasts in the mixture for at least 30 minutes (or up to 4 hours) in the refrigerator.
- 3Preheat grill to medium-high heat.
- 4Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F.
- 5Grill the sliced zucchini, bell peppers, red onion wedges, and cherry tomatoes alongside the chicken until tender and slightly charred.
- 6Let the chicken rest for 5 minutes before slicing.
- 7Serve the grilled chicken with the grilled vegetables.
