Ingredients

  • 1 lb lean ground turkey
  • 1 head butter lettuce
  • 2 medium carrot
  • 1 batch Pickling Solution
  • 2 tbsp garlic-infused oil
  • 1 tbsp avocado oil
  • 1 blend Turkey Seasoning Blend
  • 1 to taste salt and pepper
  • 2 tbsp lime juice
  • 1 tsp fresh ginger
  • 4 oz mild green chiles
  • 1 garnish fresh herbs

Instructions

  1. 1In a small bowl, combine apple cider vinegar, water, brown sugar, and sea salt. Stir until sugar and salt dissolve. Add julienned carrots, ensuring they are submerged. Set aside to quick pickle for at least 15 minutes.
  2. 2Heat avocado oil and garlic-infused oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it apart, until browned. Drain any excess fat. Stir in ground cumin, smoked paprika, oregano, salt, pepper, grated ginger, lime juice, and diced mild green chiles. Cook for another 3-5 minutes, until heated through and flavors meld.
  3. 3Drain the pickled carrots. Spoon the seasoned turkey mixture into individual butter lettuce cups. Top with pickled carrots, fresh chopped chives, and fresh chopped parsley. Serve immediately.
