Ingredients
- 1.5 lbs Chicken Breast
- 0.25 cup Extra Virgin Olive Oil (for marinade)
- 0.25 cup Lemon Juice (for marinade)
- 4 cloves Garlic
- 1 tbsp Dried Thyme
- 1 tsp Salt
- 0.5 tsp Coarsely Ground Pepper
- 1 tsp Lemon Zest
- 1.5 cups Non-fat Greek Yogurt
- 1 whole Large Cucumber
- 2 tbsp Fresh Dill, chopped
- 1 tbsp Fresh Mint, chopped
- 1 tbsp Extra Virgin Olive Oil (for tzatziki drizzle)
- 1 tbsp Lemon Juice (for tzatziki)
- 0.25 tsp White Pepper
Instructions
- 1Combine chicken cubes with 1/4 cup olive oil, 1/4 cup lemon juice, 2 minced garlic cloves, thyme, 1 tsp salt, pepper, and lemon zest. Marinate for at least 30 minutes.
- 2For tzatziki, mix Greek yogurt, grated cucumber, remaining 2 minced garlic cloves, dill, mint, 1 tbsp lemon juice, 1/2 tsp salt, and white pepper. Chill.
- 3Thread marinated chicken onto skewers. Grill over medium-high heat for 8-12 minutes, turning occasionally, until cooked through and golden brown.
- 4Serve hot chicken skewers immediately with the chilled tzatziki sauce, drizzled with the remaining 1 tbsp extra virgin olive oil.
