  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 2 cloves garlic
  • 3 tablespoons parsley
  • 1 tablespoon thyme
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes

Instructions

  1. 1Clean the mushrooms with a damp cloth and trim the stems.
  2. 2In a large bowl, whisk together extra virgin olive oil, apple cider vinegar, lemon juice, minced garlic, chopped parsley, thyme, sea salt, black pepper, and red chili flakes.
  3. 3Add the mushrooms to the bowl and toss gently to coat them evenly with the marinade.
  4. 4Cover the bowl with a lid or plastic wrap and refrigerate for at least 2 hours, preferably overnight, allowing the flavors to meld.
  5. 5Every few hours, gently stir the mushrooms to ensure they marinate evenly.
  6. 6Once marinated, remove the mushrooms from the refrigerator and let them come to room temperature before serving. This enhances their flavors.
  7. 7Serve the marinated mushrooms with a slotted spoon, allowing excess marinade to drain, and garnish with additional fresh parsley if desired.
