Mediterranean Baked Salmon with Roasted Cauliflower

Ingredients

  • 2 fillets salmon fillets
  • 4 cups cauliflower florets
  • 3 tbsp extra virgin olive oil
  • 0.5 lemon lemon
  • 1 tbsp fresh rosemary
  • 1 tsp dried thyme
  • 0.25 onion red onion
  • 1 tsp garlic paste
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp white wine vinegar
  • 1 tsp parsley flakes
  • 0.5 cup grape tomatoes
  • 0.25 cup feta cheese
  • 0.25 cup pimento stuffed olives

Instructions

  1. 1Preheat oven to 400°F (200°C). Toss cauliflower florets with 2 tbsp extra virgin olive oil, dried Thyme, 1/2 tsp salt, and 1/4 tsp black pepper on a baking sheet. Roast for 15 minutes.
  2. 2While cauliflower roasts, pat salmon fillets dry. In a small bowl, combine remaining 1 tbsp extra virgin olive oil, garlic paste, fresh rosemary, 1/2 tsp salt, and 1/4 tsp black pepper. Rub mixture over salmon.
  3. 3Add red onion slices and grape tomatoes to the baking sheet with the cauliflower. Place salmon fillets among the vegetables, topping each with lemon slices. Drizzle white wine vinegar over vegetables.
  4. 4Return to oven and bake for another 12-15 minutes, or until salmon is cooked through and cauliflower is tender-crisp.
  5. 5Garnish with crumbled feta cheese, sliced pimento stuffed olives, and parsley flakes before serving.
