- 2 pieces grain tortillas
- 4 large eggs
- 1 cup chickpea
- 2 cups spinach
- 0.25 cup greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 clove garlic
- 0.5 teaspoon turmeric
- 0.5 teaspoon cumin
- 0.25 teaspoon paprika
- 2 tablespoons cilantro
- 0.5 teaspoon sea salt
- 0.25 teaspoon black pepper
Instructions
- 1Whisk eggs in a bowl, season with turmeric, cumin, paprika, salt, and pepper.
- 2Heat olive oil in a non-stick pan over medium heat. Add minced garlic and sauté until fragrant.
- 3Add the seasoned eggs to the pan, cooking and stirring until softly scrambled.
- 4Remove scrambled eggs from pan and set aside. In the same pan, add chickpeas and cook until warmed through.
- 5Add spinach to the pan with chickpeas, stirring until spinach is wilted.
- 6Prepare the yogurt sauce by mixing Greek yogurt with lemon juice, a pinch of salt, and chopped cilantro.
- 7Warm whole grain tortillas according to package instructions.
- 8Lay out the tortillas, and evenly distribute the scrambled egg mixture, chickpeas, and spinach onto each.
- 9Drizzle each with the prepared yogurt sauce.
- 10Fold the tortillas over the filling, tucking in the sides to form burritos.
- 11Serve immediately, garnished with additional cilantro if desired.
