Mediterranean Breakfast Muffins
A healthy, Mediterranean twist on classic breakfast muffins, featuring turkey bacon, eggs, spinach, and feta cheese, baked to perfection.

Ingredients
- 1 tablespoon olive oil
- 6 units eggs
- 2 cups spinach
- 1.5 cups wheat flour
- 1 cup milk
- 0.5 cup feta cheese
- 0.5 cup cherry tomatoes
- 2 teaspoons baking powder
- 0.5 teaspoon salt
- 0.25 teaspoon peppers
- 1 teaspoon oregano
- 8 slices turkey bacon
Instructions
- 1Preheat the oven to 350°F (175°C). Grease muffin tins with olive oil.
- 2In a skillet over medium heat, cook the turkey bacon until crispy. Let it cool, then crumble.
- 3In a large bowl, whisk the eggs. Add in the milk and whisk until well combined.
- 4Chop the spinach and halve the cherry tomatoes.
- 5Add spinach, cherry tomatoes, crumbled turkey bacon, feta cheese, and spices (salt, black pepper, oregano) to the egg mixture.
- 6Sift the whole wheat flour and baking powder together, then fold into the wet ingredients until just mixed.
- 7Fill the greased muffin tins about 3/4 full with the mixture.
- 8Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center comes out clean.
- 9Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
