- 1 large cucumber
- 3 medium tomatoes
- 0.25 cup onion
- 0.5 any color bell pepper
- 3 tablespoons olive oil
- 1 tablespoon wine vinegar
- 1 clove garlic
- 1 teaspoon lemon zest
- 0.25 cup parsley
- 0.5 teaspoon oregano
- 0 to taste sea salt
- 0 to taste peppers
- 1 tablespoon mint
Instructions
- 1In a large bowl, combine the diced cucumber, tomatoes, red onion, and bell pepper.
- 2In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, minced garlic, lemon zest, chopped parsley, oregano, salt, and pepper.
- 3Pour the dressing over the cucumber and tomato mixture and toss gently to combine.
- 4Taste and adjust seasonings as needed.
- 5If using, garnish with fresh mint.
- 6Chill for at least 15 minutes before serving to allow the flavors to meld. Serve cold.
