- 1.5 lbs skinless boneless chicken thighs
- 1 large head cauliflower
- 1 lb green beans
- 3 tbsp extra virgin olive oil
- 4 cloves garlic
- 1 tbsp fresh rosemary
- 1 tbsp thyme
- 1 tsp oregano
- 1.5 tsp sea salt
- 0.5 tsp coarsely ground pepper
- 2 tbsp unsalted butter
- 2 tbsp parsley
- 0.25 cup water
- 1 small shallot
- 0.5 tsp paprika
Instructions
- 1Marinate chicken thighs with 1 tbsp olive oil, 2 cloves minced garlic, rosemary, thyme, oregano, 1 tsp sea salt, pepper, and paprika for at least 15 minutes.
- 2Grill chicken over medium-high heat for 5-7 minutes per side, or until cooked through and juices run clear.
- 3Steam or boil cauliflower florets until very tender. Drain well, then mash with unsalted butter, remaining 2 cloves minced garlic, minced shallot, 1/4 cup water, and remaining 0.5 tsp sea salt.
- 4Toss green beans with 2 tbsp olive oil, a pinch of sea salt, and pepper. Sauté or roast until tender-crisp.
- 5Serve grilled chicken alongside mashed cauliflower and green beans, garnished with fresh parsley.
