Ingredients

  • 1.5 lbs lean ground turkey
  • 1 medium zucchini
  • 1 cup oyster mushrooms
  • 0.25 cup parsley
  • 1 tbsp fresh rosemary
  • 1 tsp dried rubbed sage
  • 1 tsp thyme
  • 1 eggs
  • 0.5 cup brown rice flour
  • 2 tbsp garlic-infused oil
  • 1 tbsp extra virgin olive oil
  • 2 tbsp tomato paste
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 cup lower sodium beef broth
  • 0.5 lemon lemon zest
  • 0.25 cup feta cheese

Instructions

  1. 1Preheat oven to 375°F (190°C). Lightly grease a loaf pan with olive oil.
  2. 2In a large bowl, combine lean ground turkey, grated zucchini, chopped oyster mushrooms, parsley, rosemary, sage, thyme, egg, brown rice flour, garlic-infused oil, tomato paste, salt, black pepper, lower sodium beef broth, lemon zest, and crumbled feta. Mix gently until just combined.
  3. 3Form the mixture into a loaf shape and place it in the prepared pan.
  4. 4Bake for 60-70 minutes, or until cooked through and an internal temperature of 165°F (74°C) is reached.
  5. 5Let the meatloaf rest for 10 minutes before slicing and serving.
