Ingredients
- 2 lbs pork loin
- 2 cups spinach
- 0.5 cup sun-dried tomatoes
- 0.75 cup feta cheese
- 2 cloves garlic
- 2 tbsp olive oil
- 1 tbsp rosemary
- 1 tsp lemon zest
- 1 tsp sea salt
- 0.5 tsp peppers
Instructions
- 1Preheat oven to 375°F (190°C).
- 2Make a deep cut along the side of the pork loin to create a pocket for stuffing.
- 3In a bowl, combine spinach, sun-dried tomatoes, feta, minced garlic, lemon zest, salt, and pepper.
- 4Stuff the pork loin with the spinach mixture, then tie with kitchen string to secure.
- 5Rub the outside of the pork loin with olive oil, then season with rosemary, salt, and pepper.
- 6Place the pork loin on a roasting rack in a roasting pan.
- 7Roast in the preheated oven for approximately 75 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
- 8Remove from oven and let rest for 10 minutes before slicing.
- 9Slice the pork loin into thick slices.
- 10Serve warm.
