Ingredients

  • 2 eggs
  • 1 tbsp extra virgin olive oil
  • 0.25 cup red bell peppers
  • 0.25 cup roma tomatoes
  • 1 tbsp fresh basil
  • 0 to taste salt
  • 0 to taste coarsely ground pepper
  • 0.25 cup feta cheese
  • 1 cup spinach
  • 1 tbsp red onion
  • 1 clove garlic
  • 2 tbsp kalamata olives
  • 1 tbsp sun-dried tomatoes
  • 0.5 tsp oregano
  • 1 tbsp parsley
  • 1 tsp lemon juice

Instructions

  1. 1Whisk eggs with salt and pepper.
  2. 2Heat olive oil in a non-stick skillet over medium heat. Sauté red onion, garlic, and red bell pepper until softened. Add spinach, Roma tomatoes, Kalamata olives, sun-dried tomatoes, and dried oregano; cook briefly until spinach wilts.
  3. 3Pour in whisked eggs. Scramble until just set, then gently fold in crumbled feta cheese and fresh basil.
  4. 4Remove from heat. Stir in fresh lemon juice and garnish with fresh parsley.
  5. 5Serve immediately.
