Ingredients
- 1 pound shrimp
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 clove garlic
- 1 cup celery
- 1 cup cherry tomatoes
- 1 cup cucumber
- 0.5 cup red onion
- 1 avocado
- 4 cups lettuce
- 0.25 cup parsley
- 1 teaspoon sea salt
- 0.5 teaspoon black pepper
Instructions
- 1In a large bowl, combine 2 tablespoons of olive oil, 1 tablespoon of lemon juice, minced garlic, sea salt, and black pepper.
- 2Add shrimp to the bowl and toss to coat. Let marinate for 10 minutes.
- 3Heat a grill pan over medium-high heat. Grill shrimp until pink and opaque, about 2-3 minutes per side. Remove from heat and let cool.
- 4In a small bowl, whisk together the remaining olive oil and lemon juice to create the dressing.
- 5In a large salad bowl, combine celery, cherry tomatoes, cucumber, red onion, avocado, and mixed greens.
- 6Add the cooled shrimp to the salad.
- 7Drizzle the dressing over the salad and toss gently to combine.
- 8Garnish with fresh parsley.
- 9Season with additional sea salt and black pepper to taste.
- 10Serve immediately or chill in the refrigerator for up to 1 hour before serving to allow flavors to meld.
