Mediterranean Steak and Eggs Breakfast

Ingredients
- 2 tablespoons olive oil
- 400 grams beef steak
- 4 large eggs
- 2 medium tomatoes
- 2 cups spinach
- 2 cloves garlic
- 1 whole lemon
- 4 slices wheat bread
- 1 whole avocado
- 0.5 medium red onion
- 0.5 medium cucumber
- 50 grams feta cheese
- 1 handful black olives
- 1 teaspoon oregano
Instructions
- 1Preheat the grill on high. Brush the steak with 1 tablespoon of olive oil and season with salt, pepper, and oregano.
- 2Grill the steak for 3-4 minutes on each side for medium-rare, or until desired doneness. Let it rest for 5 minutes, then slice thinly.
- 3While the steak rests, heat the remaining olive oil in a pan over medium heat. Add the garlic and spinach, sautéing until the spinach wilts.
- 4In another pan, fry the eggs to your liking, either poached or fried.
- 5Toast the whole grain bread slices.
- 6Assemble the plates: Layer the toast with sliced steak, eggs, and sautéed spinach.
- 7Top with diced tomatoes, sliced avocado, red onion, cucumber, crumbled feta, and black olives.
- 8Drizzle with lemon juice and a sprinkle of oregano.
- 9Serve immediately, garnished with additional oregano if desired.
