- 1 pound steaks
- 2 medium zucchini
- 1 large red bell peppers
- 1 cup cherry tomatoes
- 1 medium red onion
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 2 cloves garlic
- 4 cups lettuce
- 1 handful basil
- 1 teaspoon sea salt
- 1 teaspoon black pepper
Instructions
- 1Preheat grill to medium-high heat. Season the steak with salt and pepper.
- 2Grill steak to desired doneness, about 5-7 minutes per side for medium-rare. Let it rest for 5 minutes then slice thinly.
- 3Preheat the oven to 400 degrees F. Toss zucchini, bell pepper, and red onion with 1 tablespoon of olive oil, salt, and pepper. Roast for 20 minutes.
- 4Whisk together red wine vinegar, remaining olive oil, minced garlic, salt, and pepper to create the vinaigrette.
- 5In a large bowl, combine the roasted vegetables with the cherry tomatoes and mixed greens.
- 6Add the sliced steak and fresh basil to the bowl.
