Mediterranean Stuffed Pork Chops

Ingredients
- 4 pieces pork chops
- 2 cups spinach
- 0.5 cup feta cheese
- 2 cloves garlic
- 2 tablespoons oregano
- 1 tablespoon thyme
- 1 teaspoon lemon zest
- 2 tablespoons olive oil
- 0.5 teaspoon sea salt
- 0.25 teaspoon black pepper
Instructions
- 1Preheat the oven to 375°F (190°C).
- 2Make a pocket in each pork chop by cutting into the side; set aside.
- 3In a skillet over medium heat, warm 1 tablespoon of olive oil. Sauté garlic until fragrant.
- 4Add spinach to the skillet, cooking until wilted. Remove from heat.
- 5In a bowl, mix the wilted spinach, feta cheese, oregano, thyme, and lemon zest.
- 6Stuff each pork chop with the spinach mixture and secure with toothpicks.
- 7Season the outside of the pork chops with salt and pepper.
- 8In the same skillet, heat the remaining olive oil over medium-high heat. Sear each pork chop for 2 minutes on each side, or until golden.
- 9Transfer the pork chops to a baking dish and bake in the preheated oven for about 20 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
- 10Let the pork chops rest for 5 minutes before serving.
- 11Remove toothpicks before serving.
- 12Serve hot, garnished with additional fresh herbs if desired.
