- 8 slices turkey bacon
- 6 large eggs
- 2 cups spinach
- 0.5 cup feta cheese
- 1 cup wheat flour
- 0.75 cup milk
- 2 teaspoons baking powder
- 0.5 medium onion
- 2 cloves garlic
- 1 teaspoon peppers
- 0.5 teaspoon sea salt
Instructions
- 1Preheat oven to 375°F (190°C). Grease a muffin tin with olive oil.
- 2Cook the turkey bacon in a skillet over medium heat until crispy. Remove from heat, chop into small pieces, and set aside.
- 3In the same skillet, sauté the chopped onion and minced garlic until soft and fragrant.
- 4Whisk the eggs in a large bowl. Add the sautéed onion and garlic, chopped spinach, crumbled feta cheese, chopped turkey bacon, and mix well.
- 5In a separate bowl, combine the whole wheat flour, baking powder, black pepper, and sea salt.
- 6Gradually add the dry ingredients to the egg mixture, alternating with milk, and stir until just combined.
- 7Divide the batter evenly among the prepared muffin tins.
- 8Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- 9Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
