Ingredients

  • 1 lb lean ground turkey
  • 0.5 yellow onion
  • 1 tbsp garlic paste
  • 1 tsp oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp extra virgin olive oil
  • 12 oz roasted red peppers
  • 0.25 cup fresh basil
  • 2 cup red cabbage
  • 0.5 cucumber
  • 0.25 red onion
  • 3 tbsp apple cider vinegar
  • 1 tbsp lemon juice
  • 1 tsp honey
  • 6 lettuce leaves

Instructions

  1. 1In a bowl, combine ground turkey, minced yellow onion, garlic paste, oregano, salt, and black pepper. Form into four patties.
  2. 2Heat extra virgin olive oil in a skillet over medium heat. Cook turkey patties for 5-7 minutes per side, or until cooked through and browned.
  3. 3For the slaw, combine shredded red cabbage, diced cucumber, and thinly sliced red onion in a separate bowl.
  4. 4Whisk together Apple Cider Vinegar, lemon juice, honey, a pinch of salt, and black pepper for the dressing. Toss with the slaw.
  5. 5Serve turkey burgers on lettuce leaves, topped with the drained roasted red peppers and chopped fresh basil, alongside the cabbage slaw.
