- 1 can tomatoes
- 1 large onion
- 3 garlic
- 2 carrot
- 2 celery
- 2 cups spinach
- 4 cups vegetable broth
- 2 teaspoons cumin
- 1 teaspoon coriander
- 1 teaspoon paprika
- 1 teaspoon turmeric
- 0.5 teaspoon black pepper
- 2 tablespoons olive oil
- 1 lemon
Instructions
- 1Rinse and drain chickpeas; set aside.
- 2Heat olive oil in a large pot over medium heat.
- 3Add chopped onion, minced garlic, diced carrots, and sliced celery; sauté until vegetables are softened.
- 4Stir in cumin, coriander, paprika, and turmeric; cook for 2 minutes until fragrant.
- 5Add the chickpeas and diced tomatoes to the pot.
- 6Pour in vegetable broth and bring the mixture to a boil.
- 7Reduce heat to low, cover, and simmer for 30 minutes.
- 8Add chopped spinach and simmer for another 5 minutes.
- 9Season with black pepper and add juice from one lemon.
- 10Taste and adjust seasoning if necessary.
- 11Serve hot.
- 12Optional: Garnish with a drizzle of olive oil and a sprinkle of fresh chopped parsley before serving.
