Ingredients

  • 2 cups chickpea
  • 14.5 ounces tomatoes
  • 4 cups vegetable broth
  • 1 large onion
  • 3 cloves garlic
  • 2 large carrot
  • 2 stalks celery
  • 2 cups spinach
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • 0.25 cup cilantro
  • 1 whole lemon
  • 2 tablespoons olive oil

Instructions

  1. 1Heat olive oil in a large pot over medium heat.
  2. 2Add chopped onion, minced garlic, diced carrots, and chopped celery. Cook until softened, about 5 minutes.
  3. 3Stir in cumin, coriander, and paprika, cooking for another minute until fragrant.
  4. 4Add the diced tomatoes (with their juice) and vegetable broth. Bring to a simmer.
  5. 5Rinse and drain chickpeas before adding them to the pot.
  6. 6Cover and let simmer for 25 minutes, allowing the flavors to meld.
  7. 7Add the chopped spinach and cook until it wilts, approximately 3 minutes.
  8. 8Remove from heat. Stir in freshly squeezed lemon juice and chopped cilantro.
  9. 9Adjust seasoning with salt and pepper to taste.
  10. 10Serve hot, garnished with additional cilantro if desired.
