Nordic Smoked Salmon & Egg Scramble

Ingredients

  • 3 large free-range eggs
  • 3 oz salmon
  • 2 tbsp dill
  • 1 tsp lemon zest
  • 1 tbsp chives
  • 1 tbsp olive oil
  • 1 cup spinach
  • 0.25 tsp sea salt
  • 0.125 tsp peppers

Instructions

  1. 1Gently whisk eggs with sea salt and white pepper in a bowl. Add chopped chives and dill, and lemon zest.
  2. 2Heat olive oil in a non-stick skillet over medium-low heat.
  3. 3Add baby spinach to the skillet and saute briefly until wilted, about 1 minute.
  4. 4Pour the egg mixture into the skillet. Cook, gently stirring and scrambling the eggs, until they are mostly set but still slightly moist, about 3-5 minutes.
  5. 5Gently fold in the smoked salmon pieces into the scrambled eggs. Cook for another minute until the salmon is warmed through.
  6. 6Serve immediately, garnished with extra fresh dill if desired.
