Ingredients

  • 1 pound calamari rings
  • 0.5 cup almond flour
  • 2 eggs
  • 1 teaspoon paprika
  • 0.5 teaspoon garlic powder
  • 1 teaspoon lemon
  • 0.25 cup basil
  • 2 tablespoons avocado oil
  • 2 tablespoons lime juice
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper

Instructions

  1. 1Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. 2In a shallow bowl, combine almond flour, paprika, garlic powder, lemon zest, sea salt, and black pepper.
  3. 3In another shallow bowl, beat the eggs.
  4. 4Dip each calamari ring into the egg, then coat with the almond flour mixture. Place on the prepared baking sheet.
  5. 5Bake for 20-25 minutes until the calamari is golden and cooked through.
  6. 6While the calamari bakes, prepare the lime basil mayo by blending fresh basil, lime juice, avocado oil, and a pinch of salt in a food processor until smooth.
  7. 7Serve the baked calamari immediately with the lime basil mayo on the side for dipping.
  8. 8Garnish with additional fresh basil and lime wedges if desired.
