Ingredients

  • 1 cup shelled pistachios
  • 1 cup cilantro
  • 2 cloves garlic
  • 2 tablespoons lemon juice
  • 3 tablespoons olive oil
  • 2 tablespoons water
  • 0.5 teaspoon sea salt
  • 0.5 teaspoon cumin
  • 0.25 teaspoon coriander
  • 0.25 teaspoon red pepper flakes

Instructions

  1. 1Place shelled pistachios in a food processor and pulse until finely chopped.
  2. 2Add fresh cilantro leaves, peeled garlic cloves, lemon juice, extra virgin olive oil, and water to the food processor.
  3. 3Season with sea salt, ground cumin, ground coriander, and red pepper flakes.
  4. 4Blend until the mixture becomes smooth and creamy, scraping down the sides as necessary.
  5. 5Taste the dip and adjust seasoning if needed, adding more salt or lemon juice to suit your preference.
  6. 6Transfer the dip to a serving bowl and let it chill in the refrigerator for at least 30 minutes to allow flavors to meld.
  7. 7Before serving, give the dip a quick stir. Optionally, drizzle a bit more extra virgin olive oil on top.
  8. 8Garnish with a sprinkle of chopped pistachios and a few cilantro leaves.
