Ingredients

  • 1.5 kg pork loin
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 2 tablespoons rosemary
  • 2 tablespoons thyme
  • 1 tablespoon oregano
  • 1 lemon lemon zest
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika

Instructions

  1. 1Preheat the oven to 350°F (175°C).
  2. 2Rub the pork loin with 1 tablespoon of olive oil.
  3. 3Finely chop the garlic, rosemary, thyme, and oregano. Mix these herbs with lemon zest, sea salt, black pepper, and paprika.
  4. 4Apply the herb mixture evenly over the pork loin, pressing gently to adhere.
  5. 5Place the pork loin in a roasting pan and drizzle with the remaining olive oil.
  6. 6Roast in the preheated oven until the pork reaches an internal temperature of 145°F (63°C), about 60 minutes.
  7. 7Let the pork loin rest for 10 minutes before slicing. This allows the juices to redistribute throughout the meat, ensuring it's moist and flavorful.
  8. 8Slice the pork loin and serve immediately.
  9. 9Garnish with additional fresh herbs if desired.
  10. 10Optionally, serve with a side of roasted Mediterranean vegetables for a complete meal.
