Ingredients
- 1 kg pork loin
- 2 large red bell peppers
- 3 cloves garlic
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 tablespoon thyme
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- 2 tablespoons lemon juice
Instructions
- 1Preheat the oven to 350°F (175°C).
- 2Roast the red bell peppers in the oven until charred, then peel and deseed them.
- 3Blend the roasted red peppers, garlic, smoked paprika, cumin, and lemon juice to make the red pepper paste.
- 4Rub the pork loin with sea salt and black pepper.
- 5In a skillet, heat the olive oil over medium heat and sear the pork loin on all sides.
- 6Coat the seared pork loin with the red pepper paste.
- 7Place the pork loin in a roasting pan and roast in the oven for approximately 30-35 minutes, or until it reaches an internal temperature of 145°F (63°C).
- 8While the pork is roasting, finely chop the fresh thyme.
- 9Once the pork is done, let it rest for 10 minutes before slicing.
- 10Serve the sliced pork loin garnished with the fresh thyme.
- 11Optionally, drizzle with additional olive oil and lemon juice before serving.
